Gluten and Dairy-Free Avocado Chicken Melt
This Avocado Chicken Melt is not only gluten and dairy-free but also packed with flavor. Using your favorite gluten-free bread (mine will be linked below), tender shredded chicken, creamy avocado, and a zesty sauce, this melt is sure to become a household favorite!
Ingredients:
For the Sandwich:
- Gluten-free bread of choice
- Sam’s Choice Gluten Free Bread
- This is one of my fav gluten free breads that you can find at your local Walmart (Warning they are small slices so you will want to make more than one sandwhich for this recipe)
- Fresh spinach leaves
- 1 ripe avocado, sliced
- Shredded chicken (about 1 cup)
- (Violife) vegan gouda cheese, sliced
- Vivolife Gouda Cheese
- This is great vegan cheese, it has great flavor, and the best part is that it’s gooey and stringy when melted!!
For the Sauce:
- 1 cup mayonnaise
- 1 green onion, finely chopped
- 1 teaspoon garlic powder
- 2-3 chipotle peppers in adobo sauce, finely chopped (adjust to taste)
- Salt and pepper to taste
Instructions:
- Prepare the Sauce:
- In a small bowl, combine the mayonnaise, green onion, garlic powder, and chopped chipotle peppers in adobo sauce.
- Mix well and season with salt and pepper to taste.
- Assemble the Sandwiches:
- Preheat your oven to 350°F (175°C).
- Lay out the gluten-free bread slices on a baking sheet.
- Spread a generous layer of the prepared sauce on each slice of bread.
- Layer the shredded chicken evenly over half of the bread slices.
- Top the chicken with fresh spinach leaves.
- Add slices of vegan gouda cheese over the spinach.
- Place avocado slices on top of the cheese.
- Cover with the remaining bread slices to form sandwiches.
- Bake the Sandwiches:
- Place the sandwiches in the preheated oven.
- Bake for 15-20 minutes, or until the bread is crispy and the cheese is melted and bubbly.
- Serve:
- Remove the sandwiches from the oven and let them cool slightly before serving.
- Slice each sandwich in half if desired, and enjoy your delicious, gluten and dairy-free Avocado Chicken Melt!
